Igado

A loved Ilocano dish that is full of savory flavors. Igado is a special addition during birthdays and is only served when there's a celebration.

I recently found out that this dish is a celebration meal for my family in the province. My mom described it as a special occasion meal. It didn’t occur to me that every time I get to eat this dish is during a family reunion because all the other dishes are usually the same during normal meals.

If you love liver then this is the dish for you though it can be quite oily. If that's not your style then try to sift the meat with your spatula against the pan to lessen the oil when serving.

  1. Marinate the lean meat and liver in soy sauce, whole black pepper, and pepper leaves.
  2. After marinating, get a pan and pour half a cup of oil.
  3. Saute the liver spread, garlic, and onion in the oil until it turns brown.
  4. APut in the lean meat and liver with the bell pepper. Leave for 15 mins. Then it's ready for serving.
